30 minPlain yogurt is the secret weapon in this pancake batter. It reacts with baking soda to create extra lift, giving you a stack that’s noticeably lighter and more tender than standard pancakes made with milk alone. The slight tang from the yogurt also balances the sweetness, so each bite has real depth.
The technique here is all about restraint. You want to mix the wet ingredients into the dry just until everything is dampened. A few lumps are fine and actually preferred. Overmixing develops the gluten in the flour, which turns your light, airy pancakes into tough, chewy discs.
Kitchen Tips
- Use full-fat yogurt for the richest flavor and best texture. Low-fat works but produces a slightly thinner pancake.
- Let the batter rest 5 minutes before cooking. This gives the baking soda time to activate fully for maximum rise.
- Watch for bubbles on the surface before flipping. When the edges look set and bubbles pop without filling back in, it’s time to turn.
- Keep your griddle at medium heat. Too hot and the outside browns before the inside cooks through.
Variations
- Blueberry yogurt pancakes: Fold in ½ cup fresh blueberries just before cooking.
- Whole wheat version: Swap half the flour for whole wheat flour and add an extra splash of milk to keep the batter pourable.
- Greek yogurt swap: Use Greek yogurt and increase the milk by 2-3 tablespoons to compensate for the thicker consistency.

I made these today, they were better than excellent. I don't have a word for it, but I haven't made pancakes this good with any other recipe. Thanks so much.
These are the best pancakes I have ever made. I use my own homemade yogurt in them. I always make them for company and have to give them the recipe.
if you choose a flavored yogurt, would the flavor of the product change? I'm thinking of a strawberry flavor. :P
