These are homemade granola bars the way granola bars used to be: dense, cakey, packed with real seeds and dried fruit, and not nearly as candy-bar-sweet as the boxed kind. Most of the sweetness comes from molasses and frozen orange juice concentrate, not refined sugar, so they keep blood-sugar response steady enough to land in the diabetic-friendly category.

The lineup is a who’s-who of pantry whole grains and seeds: rolled oats, wheat germ, sunflower seeds, sesame seeds, raisins, and chopped apricots. Cinnamon and ginger ground spice the dough warm without going Christmas-cookie loud.

The orange juice concentrate is the unsung hero. As the bars bake, the citrus aromatics cook off and what’s left behind is concentrated orange sweetness that brightens every other ingredient on the list.

Pro Tips

  • Defrost the orange juice concentrate fully but do not dilute. The undiluted concentrate is what gives the bars their chewy, fruit-forward sweetness.
  • The batter is genuinely stiff. Press it into the pan with damp fingers or a piece of parchment to spread it evenly.
  • Cut while still slightly warm. Wait until fully cooled and the bars firm up so much that they crack instead of slicing cleanly.
  • These are more like a dense fruit cake than commercial granola bars. Expect tender, not crunchy.

Variations

  • Swap raisins for dried cranberries and apricots for chopped dates or figs.
  • Use pumpkin seeds in place of sunflower for a more savory note.
  • Add ½ cup chopped walnuts or pecans for extra crunch and protein.

Directions

Preheat oven to 350℉ (180℃).

Cream the oil, brown sugar, and molasses together in a bowl.

Add the defrosted unsweetened orange juice concentrate.

Combine the flour, baking soda, cinnamon and ginger.

Blend into the creamed mixture.

Stir in the oats, raisins, apricots, sunflower seeds, wheat germ, and sesame seeds.

This makes a very stiff batter.

Spread in a greased 9 x 13 inch pan.

Bake about 20 to 30 minutes or until light brown.

Cut into bars.

These are more like a dense cake than commercial granola bars.
