Grapefruit soju cocktails mix fresh grapefruit juice with chilled soju and a splash of club soda. A tart, low-ABV Korean drink that scales up easily for a crowd.

18 minGrapefruit soju cocktails are the Korean bar move that turned a humble rice-and-grain liquor into an internationally recognized drink. Freshly squeezed grapefruit juice meets superfine sugar, a pinch of salt (the key move, it tames the grapefruit’s bitterness without dulling its brightness), and chilled soju for a pitcher-sized punch that scales beautifully from two drinks to twenty.
Straining the juice is what separates a good glass from a great one. Pulp-free juice gives you that clean, almost translucent pink you see in Seoul cocktail bars, and it mixes more evenly with the liquor. A splash of cold club soda at the end adds lift so the drink reads crisp and bubbly instead of flat-sweet.
Bar Tips
- Use pink or ruby grapefruit for the best color and a naturally sweeter base. White grapefruit works but tastes sharper and needs more sugar.
- The salt is not optional. An eighth of a teaspoon across a quart suppresses bitterness the way a pinch of salt in coffee does. Do not taste it, just trust it.
- Use superfine sugar or dissolve granulated in warm water first. Undissolved sugar grains settle at the bottom of the pitcher and the last glass ends up overly sweet.
- If soju is unavailable, chilled vodka or sake works. Soju sits around 20 percent ABV, so adjust your pour accordingly.
Variations
- Swap grapefruit for yuzu juice for a more citrus-forward, Japanese-style highball.
- Stir in a rosemary or thyme sprig as the pitcher chills for a herbaceous twist.
- Rim the glass with a mix of salt and sugar for a paloma-style finish.
