This shortcut hummus takes the store-bought stuff and makes it taste homemade with a handful of fresh herbs.

Watercress and cilantro get finely chopped and folded right into prepared hummus bi tahini, adding peppery brightness and green color that looks way more impressive than the effort involved.

Chopped pistachios stirred in plus a drizzle of olive oil on top before serving add crunch and richness that transform basic hummus into something special.

Pro Tips

  • Quality hummus base: Start with good store-bought hummus. The herbs enhance it but can’t fix bad hummus to begin with.
  • Chop herbs fine: Big chunks make the texture weird. Mince watercress and cilantro small so they distribute evenly.
  • Chill before serving: That refrigerator time lets flavors blend. The hummus also firms up slightly, making it easier to scoop with pita.

Directions

Place hummus in a bowl and fold in watercress and cilantro.

Taste to correct seasonings.

Cover and chill in the refrigrator. Before serving, add chopped pistachios, drizzle with olive oil and garnish with additional nuts.

Serve with pita wedges.
