65 minThis apple spice cake gets its character from pure maple syrup in the batter, not just maple flavoring. Three-quarters of a cup of real syrup adds a caramel-sweet depth and extra moisture that keeps the crumb tender for days. Combined with brown sugar and cinnamon, the flavor profile screams New England autumn.
Finely chopped apples and nuts get folded into the batter at the end, adding texture without making the cake heavy. The apple pieces release steam as they bake, creating tiny pockets of moisture throughout. Chopped walnuts or pecans bring a crunch that contrasts with the soft crumb.
The cream cheese frosting is the right call here. Its tangy richness balances the intense sweetness of the maple and brown sugar. Beat the cream cheese until perfectly smooth before adding the powdered sugar gradually, or you’ll end up with a lumpy frosting.
This bakes in a simple 9-inch square pan, which means thick, generous slices rather than thin rounds. Store it covered in the fridge since the cream cheese frosting needs to stay cold.
Pro Tips
- Use pure maple syrup, not pancake syrup. The flavor difference in a cake this simple is dramatic.
- Pare and chop the apples small. Large chunks sink to the bottom and leave the top of the cake apple-free.
- Let the cake cool completely before frosting. Warm cake melts cream cheese frosting into a puddle.
- Bring the cream cheese to room temperature before beating for the smoothest frosting.
Variations
- Add a pinch of nutmeg and allspice alongside the cinnamon for a deeper, more complex spice profile.
- Fold in dried cranberries with the apples for tartness and color.
- Drizzle a thin line of maple syrup over the finished frosting for a visual accent and extra maple punch.
