1 hrsMock goose has nothing to do with actual goose. It’s a classic British vegetarian dish that recreates the flavors of a traditional roast goose dinner, specifically the sage, apple, and onion combination you’d find in the stuffing and accompaniments, but without any meat at all.
Diced potatoes, apples, onions, and cheese get tossed together with fresh sage, salt, and pepper, then baked covered until everything is tender. The apples break down slightly and release their juices, which mingle with the melting cheese and softening onions into a savory-sweet filling that’s richer than the simple ingredient list suggests.
The topping goes on after 30 minutes. Sage and onion stuffing mix combined with grated cheese gets scattered over the top, then the oven cranks up high for 10 more minutes to brown and crisp it into a crunchy, golden crust. Serve it with a green salad and crusty wholemeal bread and you’ve got a proper meal.

- Dice everything roughly the same size so the potatoes, apples, and onions cook at the same rate.
- Use a firm cooking apple like Bramley or Granny Smith. Eating apples turn to mush before the potatoes are done.
- Keep the foil cover on for the full 30 minutes. Removing it early dries out the filling before the potatoes soften.
- A strong cheddar works best here. Mild cheese melts in but doesn’t contribute enough flavor.

- Add a layer of sliced parsnips for extra sweetness and depth.
- Stir in a handful of fresh thyme along with the sage for a more complex herb profile.
- Use a homemade breadcrumb and herb topping instead of packaged stuffing mix for a from-scratch version.

Directions
Method: Pre-heat oven to 375℉ (190℃).
Toss the potatoes, apples, onions, cheese and sage together, seasoning with salt and pepper until they are well mixed.
Turn the mixture into a large buttered ovenproof dish and cover with a lid of buttered foil or greaseproof paper.
Bake for about 30 minutes until the fruit and vegetables are really tender.
Meanwhile mix together the topping ingredients (Stuffing Mix and Grated Cheese).
At the end of the cooking time uncover the dish, sprinkle the topping liberally over the dish and return to the oven, raising the temperature to 475F for 10 more minutes or until just nicely browned.
Serve with a mixed green salad and plenty of crusty, wholemeal bread.
