This is meatloaf the way mom made it, no fancy ingredients, just an honest, tender loaf that slices clean and tastes like home. Diced onion and celery go right into the ground beef mixture, melting in as it bakes to keep the loaf moist and add gentle savory depth.

The smart step here is baking it covered with foil for most of the time. Trapping the steam keeps the meatloaf from drying out, the downfall of so many loaves. Only at the end do you uncover it, slick the top with ketchup, and give it a final stint in the oven to set that classic tangy glaze.

Let it rest a couple of minutes before slicing so it holds together on the plate.

Ingredients

2 lbs. ground beef
1 c. dry quick oats
1 8 oz. can tomato sauce
1 yellow onion
2 celery stalks
2 eggs
1 Tbsp. Worcestershire sauce
1/2 c. hickory smoked BBQ sauce
1 tsp. salt
1/2 tsp. pepper
1 tsp. majoram
Ketchup to taste

Directions

  1. Preheat oven to 350℉ (180℃).
  2. Dice onion and celery stalks, and finely chop celery heads.
  3. Mix all ingredients, except ketchup, by hand in a large mixing bowl until well blended.
  4. Place meat mixture into a shallow baking dish and cover with aluminum foil.
  5. Place dish into the oven for 60 to 90 minutes.
  6. Remove dish from oven when meat is cooked but tender and remove foil.
  7. Cover top of meatloaf with ketchup as preferred.
  8. Place meatloaf back into the oven and cook for an additional 10 minutes.
  9. Remove meatloaf, slice, and serve.
