No-bake brownie bites with peanut butter, oats, and M&M candies made from a boxed brownie mix cooked on the stovetop. A fudgy, drop-style cookie that yields over 6 dozen.

These no-bake brownie bites use a boxed brownie mix as a shortcut base, cooked on the stovetop with milk and butter into a thick, fudgy mixture. Peanut butter, quick oats, and M&M candies get stirred in off the heat, then the whole thing gets dropped by spoonfuls onto wax paper to set.

Boiling the brownie mix for exactly two minutes is the timing that matters. Less than two minutes and the mixture stays too loose to hold its shape. Much longer and it gets stiff and dry before you can stir in the add-ins.

The peanut butter melts into the hot brownie base and creates a fudgy, peanut-butter-cup-like flavor that runs through every bite. Creamy works best here since chunky peanut butter doesn’t blend smoothly into the hot mixture.

Stir the M&Ms in last and carefully. The candies are heat-sensitive. Rough stirring in a hot mixture cracks the shells and bleeds color into the dough. A gentle fold keeps them intact and colorful.

Pro Tips

  • Stir constantly during the boil. Brownie mix scorches fast on the bottom of the pan, and burnt chocolate tastes bitter.
  • Work fast once you take it off the heat. The mixture stiffens as it cools, and if you wait too long, it becomes impossible to drop.
  • Let them cool completely on the wax paper. They look set after 5 minutes but are still soft inside. Patience gets you a firmer, neater bite.

  • Chocolate chip version: Replace the M&Ms with chocolate chips for a more grown-up, all-chocolate cookie.

Directions

Line cookie sheets with waxed paper.

In large saucepan, combine brownie mix, milk and butter; cook over medium heat until mixture comes to a boil, stirring constantly.

Boil 2 minutes, stirring constantly.

Remove from heat.

Add peanut butter and vanilla; blend well.

Stir in oats.

Carefully stir in candy pieces.

Drop dough by tablespoonfuls onto waxed paper-lined cookie sheets.

Cool 5 minutes or until completely cooled.
