90 minNot everyone wants to babysit a fruitcake in the oven for three hours. This one never sees the inside of one.
Graham cracker crumbs, chopped dates, candied fruit, glazed pineapple, cherries, nuts, and marshmallows all get bound together with freshly whipped cream and warm holiday spices: cinnamon, nutmeg, cloves, and allspice.
You mix it by hand, pack it into a foil-lined box, and let the fridge do the rest.
It firms up into dense, chewy slices packed with fruit and crunch in every bite. No baking, no fuss, and it actually tastes like fruitcake should.
Pro Tips
- Whip the cream to firm peaks before folding in the fruit mixture. Under-whipped cream won’t hold the cake together.
- Use your hands to mix the crumbs in at the end. A spoon can’t get the crumbs distributed evenly through all that fruit.
- Chill overnight for the best slicing. The cake needs time to set fully or it’ll crumble when you cut it.
- Line with foil generously. Leave enough overhang to wrap the top, which keeps the surface from drying out.

Put everything but cream and graham crackers in a large mixing bowl.
Stir together well.
Whip the cream. Add fruit mixture to the whipped cream. Add the crumbs, gradually, mixing with hands.
Put in a graham cracker box lined with foil.
Chill in refrigerator.
