40 minThese cookies taste like a bowl of granola got together with a glass of orange juice and decided to become something better than both. Orange juice concentrate, not fresh juice, punches up the citrus flavor because it’s concentrated and syrupy, so it sweetens while it flavors.
Cinnamon and cloves give these a warm, spiced backbone, while honey adds a floral sweetness that sugar alone can’t match. The oats, raisins, and sunflower seeds bring texture in every bite: chewy, plump, and crunchy all at once.
The alternating technique for mixing (flour, then orange concentrate and honey, then flour) keeps the batter balanced and prevents the wet ingredients from turning the flour into a gluey paste.
Pro Tips
- Use undiluted frozen orange juice concentrate, not reconstituted juice. Diluted juice adds too much liquid and not enough flavor. The concentrate is thick and punchy.
- Cream the butter and sugar for a full 3 to 4 minutes until light and fluffy. This step determines whether your cookies are flat and dense or puffed and chewy.
- Space the dough 2 inches apart on the baking sheet. These spread as they bake, and crowded cookies merge into one giant granola slab.
- Pull them when lightly browned, not deeply golden. They firm up as they cool, and overbaked granola cookies turn hard and dry.
Variations
- Swap raisins for dried cranberries for a tart contrast that pairs well with the orange.
- Add chocolate chips alongside the sunflower seeds for a chocolate-orange granola cookie.
- Use maple syrup in place of honey for a more autumnal, earthy sweetness.
