This hands-off potato side dish does all the heavy lifting in the oven while you handle the rest of dinner.

Quartered red potatoes get tossed with ranch dressing, shredded cheddar, and bacon bits, then roasted under foil until tender.

A final uncovered blast crisps the cheese and concentrates flavors.

Fresh parsley brightens the finish.

Pro Tips

  • Quarter evenly: Same-size pieces cook at the same rate; aim for roughly 1-inch chunks
  • Use real bacon: Swap bacon bits for 4-5 strips of cooked, crumbled bacon for smokier depth
  • Test doneness: Fork should slide through potatoes easily at 40 minutes before removing foil
