20 minSauerkraut and grapes sounds like an odd couple, but this German-style salad makes it work beautifully. The tangy, fermented crunch of rinsed sauerkraut meets the juicy sweetness of halved blue grapes, and strips of ham add a salty, meaty anchor that ties both flavors together.
Rinsing the sauerkraut first is important. Straight from the jar, it’s too sharp and salty to eat as a salad base. A quick rinse and drain mellows the acidity while keeping the signature tang and snap.
The yogurt dressing is barely there by design. Just yogurt, honey, white pepper, and salt. It coats the ingredients lightly without drowning them, letting the contrast between sour kraut and sweet grapes stay front and center. The honey softens the yogurt’s tartness just enough.
Give it 10 minutes to marinate after mixing. The flavors need that time to find each other.
Kitchen Tips
- Chop the sauerkraut coarsely after draining. Long strands are hard to eat mixed with the other ingredients.
- Use seedless grapes if you can find them. Halving and seeding grapes is tedious work for a 20-minute salad.
- Cut the ham into thin julienne strips so it distributes evenly and you get some in every forkful.
- Taste before serving and adjust. The kraut’s saltiness varies by brand, so the dressing may need tweaking.
Variations
- Swap ham for smoked turkey breast for a lighter protein.
- Use green grapes instead of blue for a milder sweetness and brighter color contrast.
- Add a teaspoon of caraway seeds for a more traditional Central European flavor.
