No-bake Special K cereal cookies made with peanut butter, sugar, corn syrup, and crispy rice cereal. These crunchy, sweet clusters come together on the stovetop in under 15 minutes with just a handful of pantry staples.

These Special K cereal cookies are the kind of no-bake treat that disappears from the counter before they even have a chance to cool. A warm, glossy mixture of peanut butter, sugar, and corn syrup gets folded into crispy cereal and dropped by spoonfuls onto wax paper.

The whole process takes about 10 minutes from start to finish. No oven, no chilling time, no fuss.

Chef Tips

  • Stir the sugar and corn syrup constantly over medium heat to prevent scorching.
  • Remove from heat before adding peanut butter so it stays creamy rather than grainy.
  • Drop the cookies quickly. The mixture sets up fast once it starts to cool.
  • Use a cookie scoop for uniform clusters that look as good as they taste.

Variations

  • Substitute almond butter or cashew butter for the peanut butter.
  • Mix in chocolate chips, butterscotch chips, or a drizzle of melted white chocolate.
  • Add toasted coconut or crushed pretzels for extra texture and a salty-sweet contrast.
