30 minWhen you have fresh red snapper, the last thing you want to do is complicate it. This recipe gets that.
Onion rings saute in butter until translucent, then the snapper fillets lay right on top, get a spoonful of tomato sauce and a sprinkle of sweet basil, and simmer covered until the fish flakes apart with a fork. That’s it. Thirty minutes, start to plate.
The onions soften into the tomato sauce underneath, creating a built-in bed of flavor that the snapper steams over gently.
Kitchen Tips
- Keep the heat at a gentle simmer so the fish cooks through without drying out
- The fish is done when it flakes easily, usually 10 to 15 minutes depending on thickness
- Pair with steamed new potatoes and vegetables for a light, complete meal
- Fresh sweet basil makes a noticeable difference over dried if you have it on hand
