Smoky, sweet stove top baked beans loaded with crispy bacon, brown sugar, bell pepper, mustard, and liquid smoke. No oven needed for this crowd-pleasing BBQ side that gets better the longer it sits.

Y’all, these beans taste like they’ve been slow-smoking in the backyard all afternoon, but they come together right on your stovetop in about an hour.

A whole pound of bacon gets fried up crispy, and those drippings become the flavor base for everything that follows. Diced onion and red bell pepper soften in that smoky fat, then canned pork and beans get stirred in with a generous pour of brown sugar, mustard, Worcestershire, and liquid smoke.

The result is sticky, sweet, smoky, and packed with porky goodness. Make them ahead if you can. They thicken up and get even sweeter sitting in the fridge overnight.

Pro Tips

  • Don’t be shy with the brown sugar. These beans should lean sweet with a smoky backbone. You can always dial back, but go bold first
  • Add the Worcestershire and liquid smoke gradually until the color darkens to a deep, rich brown. That’s your visual cue that the flavor is right
  • Stir often during the 30-minute simmer. The sugar makes these beans want to stick to the bottom of the pot
  • These are even better the next day. The flavors concentrate as they cool and reheat like a charm

Directions

Fry bacon until crisp.

Remove and save bacon. Brown onion and bell pepper in bacon grease.

Pour in beans, brown sugar, mustard, garlic.

Mix well.

Add worcestershire and liquid smoke until color darkens.

Crumble bacon and mix.

Taste. Beans should be very sweet. Adjust brown sugar, worcestershire and liquid smoke to taste.

Simmer slowly, covered, stirring often for 30 minutes on low heat.

May be made ahead. Beans will thicken and sweeten with age.
