Canned tuna gets mixed with scallions, breadcrumbs, and a spoonful of the ginger-yogurt sauce that doubles as both a binder and a finishing drizzle.
Pan-fried until golden and crisp on the outside, they’re paired with a bright papaya salsa spiked with lime, honey, cilantro, and a pinch of ground red pepper.
Three components, one plate, and a whole lot of tropical flavor.
Chef Tips
- Reserve some ginger sauce for the patties. The recipe cleverly uses the same sauce as a binder in the cakes and a drizzle on top, so mix the sauce first and set aside what you need.
- Shape the patties firmly and coat well with breadcrumbs. This outer layer is what gives you that satisfying golden crunch when they hit the pan.
- Make the papaya salsa first and let it sit while you prep the tuna cakes. The flavors meld and the juices develop as it rests.
- Don’t flip more than once. Three minutes per side, undisturbed, gives you a proper crust. Fussing with them will break the patties apart.

Sauce preparation: in a small bowl, whisk together the yogurt, lime juice, ginger, mustard, oil, and cumin.
Set aside salsa preparation: in a small bowl, mix the papaya, sweet red pepper, chopped cilantro, lime juice, honey, and ground red pepper.
Set aside.
Tuna cake preparation: in a large bowl, combine egg substitute, tuna, scallions, ⅔ of bread crumbs, and ¼ cup of the ginger sauce.
Mix well.
Shape into four ½ inch thick patties.
Coat with remaining ⅓ cup bread crumbs.
Heat large non-stick fry pan over medium heat, warm the oil.
Add tuna patties and sauté for 3 minutes per side, or until golden brown.
Transfer to individual plates.
Drizzle with remaining ginger sauce.
Serve with the salsa and garnish with the cilantro.
