Mushroom tortellini and crisp green beans get boiled together, then tossed with smoky turkey, charred red onion, sweet peppers, and a punchy dressing that ties it all together.
That dressing is the real star: yogurt, chutney, Dijon mustard, garlic, and lemon juice blitzed in the food processor until smooth. It’s creamy without being heavy, tangy without being sharp.
Pile it all over fresh salad greens and you’ve got a meal that looks like you fussed but really only took 40 minutes from cutting board to table.

- Cook the green beans and tortellini together in the same pot to save time and dishes. They take roughly the same amount of time.
- Get the skillet screaming hot before adding the onion. That quick char adds a smoky sweetness you can’t get at lower heat.
- The dressing thickens as it sits, so toss everything together while the pasta and beans are still warm. The heat loosens the dressing and helps it coat evenly.

Bring water for tortellini and green beans to boil in covered pot.
Heat nonstick skillet until it is very hot.
Reduce heat to medium-high and add oil.
Sauté onion until it begins to brown.
Chop peppers and add to onion with hot pepper flakes.
Cook until peppers are soft.
Cut turkey into bite-size piweces and place in a serving bowl.
Wash, trim and cut green beans into inch-long pieces.
Place green beans and tortellini in boiling water and cook 3 to 4 minutes; drain.
Wash and dry greens. With food processor running, put garlic through feed tube.
Squeeze lemon juice and add to processor along with yogurt, chutney and mustard; process to blend.
Drain green beans and tortellini and add to turkey in the bowl with onion, pepper and dressing.
Mix to coat with dressing. Arrange greens on serving dish and top with salad.
