Here’s a vintage recipe that deserves a comeback. Think of it as a savory turkey custard you can slice into neat squares.

Cooked turkey gets mixed with bread crumbs, beaten eggs, cream, turkey stock, diced celery, onion, parsley, and a bright squeeze of lemon juice. Baked gently in a water bath, the mixture sets up firm enough to cut into tidy portions.

Ladle warm turkey gravy over each square and you’ve got a dish that feels like Sunday dinner at grandma’s house.

Kitchen Tips

  • The water bath is essential; it ensures gentle, even cooking so the eggs don’t curdle
  • Let it rest 5 minutes after baking for the cleanest squares
  • A sharp knife dipped in hot water makes slicing easier
  • Use homemade turkey gravy for the best pairing, but jarred works in a pinch
