1 hrsAll the flavor of enchiladas with none of the fussy rolling. Just layer and bake.
Browned ground turkey and onion get layered with strips of corn tortillas, a creamy mix of salsa, sour cream, cream of chicken soup, and pimientos, all blanketed in shredded cheddar. Two layers deep, so every forkful hits every flavor.
Thirty minutes in the oven and the cheese melts into a bubbly, golden blanket. Let it rest 10 minutes so it sets up for clean slicing.
Chef Tips
- Rinse the browned turkey under hot water to wash away excess fat for a leaner dish
- Use your favorite heat level of salsa to control the spice
- Let it rest the full 10 minutes or the layers will slide when you serve
- Top with sliced olives, diced avocado, or extra sour cream at the table
