30 minThis warm berry compote is the kind of dessert that looks and tastes like fine dining but takes 15 minutes to make. Fresh strawberries, blueberries, and raspberries warmed in a simple sugar syrup with a finish of butter and vanilla, spooned over a scoop of ice cream.
The berries are added in stages based on how delicate they are. Strawberries and blueberries go in first and cook for two minutes since they’re sturdier. Raspberries are fragile, so they get just one minute at the end to warm through without falling apart. This keeps a mix of textures in the finished compote.
Butter stirred in at the very end enriches the syrup, giving it a glossy sheen and a velvety mouthfeel that plain sugar syrup can’t match. It melts into the warm berry juices and pulls everything together.
Serve immediately on a flat plate or shallow bowl with ice cream in the center. The warm berries against cold ice cream is what makes this special.
Chef Tips
- Use the ripest, most fragrant fresh berries you can find for the best flavor
- Don’t overcook the raspberries or they’ll dissolve into mush
- A splash of vanilla extract added with the butter rounds out the sweetness
- This also works beautifully over pound cake, pancakes, or waffles
Variations
- Add a splash of Grand Marnier or Chambord with the butter for a boozy version
- Use frozen berries in winter when fresh aren’t at their peak
- Stir in a squeeze of lemon juice for brightness if the berries are very sweet
