This fire and ice salsa pairs juicy chopped watermelon with the snap of fresh jalapeno, bright lime juice, and a handful of cilantro for a salsa that hits every note your taste buds crave.

No cooking required. Just chop, toss, chill for an hour, and let the flavors get acquainted.

It’s diabetic-friendly, naturally low in fat, and works just as well scooped up with tortilla chips as it does spooned over grilled fish or layered on sour cream for a party dip.

Serve on sliced oranges or cheese-filled manicotti.
