Wild game caribou steak pounded tender, seared in butter with golden onions, then simmered in A-1 sauce, sherry, and Worcestershire: finished with flambéed brandy at the table.

Pound caribou steak to tenderize the lean wild meat, then sear it fast and hot in butter with caramelized onions for about two minutes per side.

Add sherry, A-1 steak sauce, Worcestershire, fresh chives, and parsley, then cook a few more minutes until the sauce reduces and coats the meat.

Bring the whole pan to the table, pour brandy over everything, and light it up for dramatic tableside flames.

Serves four with big flavor and bigger presentation.

Directions

Cook onions in 2 tbsp butter until golden.

Pound steak to tenderize and sear over high heat in butter and onion, about 2 min on each side.

Add sherry, A-1 sauce, 2 tbsp butter, Worcestershire, chives, parsley, pepper and salt.

Reduce heat to med and cook for 3 to 4 minutes per side.

Add brandy, bring to the table, flame and serve.
