25 minThese fritters hit that perfect sweet spot: crispy golden outside, pillowy soft inside, with tiny pockets of fresh apple throughout.
Grated apple keeps them moist while orange zest and vanilla add layers of flavor you don’t find in basic fritter recipes.
Fry them in small batches so the oil stays hot, then dust them generously with powdered sugar while they’re still warm.
Chef Tips
- Grate or finely dice unpeeled apples so they distribute evenly and cook through quickly
- Keep oil at a steady 350°F; too cool and they’ll absorb grease, too hot and they’ll burn outside while staying raw inside
- Don’t crowd the pan or the temperature will drop and your fritters will turn soggy
- Drain on paper towels and serve within 30 minutes for peak crispness
Ingredients
Directions
- unpeeled apple which is finely diced or grated.
In mixing bowl, combine beaten egg, milk, apple, sugar, salt, orange peel, orange juice and vanilla.
Sift together the flour and baking powder; fold into the apple mixture, stir just until all flour is moistened.
Drop batter by rounded teaspoon into hot oil (350 degrees).
Fry until deep golden brown, about 3 to 4 minutes, turning once. Drain fritters thoroughly on paper towels. Roll in sugar or sift the sugar.
