Once you make your own burger buns, store-bought will never feel the same.

This straightforward dough comes together with bread flour, eggs, butter, milk, and yeast. Toss everything into a bread machine on the dough setting, or mix and knead by hand for about five minutes.

After a quick rise, divide into eight balls, let them puff up on a baking sheet, brush with egg wash, and scatter your favorite seeds on top.

They bake up golden, soft, and sturdy enough to hold a loaded burger without falling apart.

Kitchen Tips

  • Use bread flour, not all-purpose. The extra protein gives these buns the structure to stand up to juicy patties.
  • Don’t stress about making perfectly round balls. The quirky-shaped ones have more character and bake just the same.
  • Brush the egg wash on gently so you don’t deflate the risen dough.

Variations

  • Everything buns: Top with a mix of sesame seeds, poppy seeds, dried garlic, dried onion, and flaky salt.
  • Brioche-style: Swap in an extra egg and double the butter for a richer, more tender crumb.
  • Whole wheat: Replace one cup of bread flour with whole wheat flour for a nuttier flavor.

Directions

Add all ingredients to bread machine and activate the dough setting, or mix all in a bowl and knead for 5 minutes.

Let rise. Dough can be taken out of bread machine after 45 minutes or left to the end of the cycle.

If rising in a bowl, oil the bowl.

Divide dough into 8 equal (more or less.) parts and form each part into a smoo th ball (again more or less, the wierd shaped ones are more fun).

Place on a cooking sheet and let rise for 20 to 40 minutes, until doubled.

Beat one egg and brush over buns, top with favorite topping sesame seeds, poppy seeds, garlic.

Bake at 400℉ (200℃). for 10 to 15 minutes.
