45 minThese chewy bars take the brownie format in a butterscotch direction, no chocolate in sight. Brown sugar does the flavor work, lending that warm, caramel-toffee note that makes a good blondie, while a full cup of wheat germ adds nutty depth, a little crunch, and a wholesome edge you won’t find in standard brownies.
The whole thing comes together in one bowl, starting by melting the fat right in the microwave, so cleanup is minimal.
The mixing rule matters: stir just enough to blend, around 20 strokes. Overmixing develops the gluten and toughens the bars, while a light hand keeps them tender and fudgy.
Broken walnuts or pecans fold in for even more crunch. Line the pan with waxed paper so you can lift the whole slab out cleanly, and cut into squares while still warm, since these firm up and crack if you wait until they are cold.
Kitchen Tips
- Stir only about 20 strokes, just until blended; overmixing makes the bars tough instead of tender.
- Cut them while still warm, as they firm up and crack once cooled.
- Line the pan with waxed paper for an easy, clean lift-out.
- Toast the wheat germ briefly first for an even nuttier flavor.
Variations
- Fold in a handful of butterscotch or chocolate chips.
- Swap the walnuts for pecans, or stir in shredded coconut.
- A pinch of cinnamon or a drizzle of caramel plays up the butterscotch.

Your recipe is all messed up. Your directions say melt the shortening but your ingredients say use oil which does not need melting. Also, your directions say molasses but it is not on the ingredient list. Your ingredients and directions dont add up.
