15 minThese old-fashioned codfish balls are a New England classic that deserves a comeback. Flaked cod mixed with creamy mashed potatoes, a beaten egg, and a touch of butter, then shaped into balls and fried until they’re golden and crunchy on the outside, fluffy on the inside.
They fry up in about a minute, which means you can have a platter ready before your guests finish their first drink.
Serve them as appetizers with cocktail sauce for dunking, or pile them up as a main course alongside coleslaw and lemon wedges.
Kitchen Tips
- Beat the mixture until smooth. This gives you a uniform texture that holds together in the fryer instead of crumbling apart.
- Keep the oil hot. If the temperature drops, the balls absorb oil and turn greasy. Work in small batches to maintain heat.
- Shape them lightly. Don’t pack them tight like meatballs. A gentle hand keeps the inside light and fluffy after frying.
