Curry powder brings warmth and complexity, while soy sauce adds the salty, savory punch that ties everything together. The sauce thickens as it simmers, so keep stirring constantly to prevent the tahini from clumping or catching on the bottom of the pot.
Let it rest covered after cooking. The flavors need time to settle and deepen. What tastes sharp right off the stove will mellow into something rounder and more balanced after sitting for 15 to 20 minutes.

Directions
Put all ingredients in a small pot & simmer. Stir constantly. Cook for 5 or 6 minutes or until mixture thickens.
Remove from heat, cover & let sit for a while.
Store left overs in fridge.
Makes 2 cups.
Serve on mashed potatoes, biscuits, pasta or vegetables.
