This is a creamed spinach shortcut for nights when the oven is busy and you need a green side dish in a hurry. Frozen spinach does the heavy work, cream cheese replaces the usual béchamel, and the microwave handles all the heat lifting.
Butter and finely chopped onion soften together in the microwave first to build flavor; that step adds the savory depth a steakhouse creamed spinach gets from the roux. The cream cheese stirred in at the end melts into the warm spinach without lumping, since it’s already at room temperature.
A pinch of nutmeg is the move that pushes this from microwave side dish to something that tastes intentional. Nutmeg’s warmth is what gives traditional creamed spinach its distinct flavor, and even an eighth teaspoon makes the difference.

- Drain the cooked spinach as thoroughly as possible. Press it in a fine-mesh strainer or wring in a kitchen towel to get rid of every drop of water.

Directions
In a small heat-resistant, non-metallic bowl melt butter in microwave for 30 seconds.
Add onions and heat, uncovered, in Microwave Oven for 4 minutes. Stir occasionally.
Cook spinach. Drain well.
Combine browned onion, spinach, salt, pepper, nutmeg and cream cheese in a shallow, 1½ quart, heat resistant, non-metallic casserole.
If desired, add milk to make a thinner mixture.
Heat, uncovered, in Microwave Oven 5 to 6 minutes or until heated through.
