The recipe is almost defiantly simple: ripe tomatoes simmered with juice or stock for 30 minutes, pureed with a generous handful of fresh basil, then finished off the heat with cream and butter swirled in for that signature velvety, almost lipstick-pink texture.
No flour, no roux, no cornstarch. The body comes from the cooked-down tomatoes and the richness comes from the cream-and-butter finish that turns it into bistro-style luxury.
Pro Tips
- Use the ripest tomatoes you can find. Out-of-season hothouse tomatoes give thin, acidic soup; peak summer tomatoes are sweet enough to balance the cream naturally.
- Add the basil to the blender at the end, not during the simmer. Cooked basil goes muddy and loses the bright, peppery flavor that defines this soup.
- Pure in batches and leave the lid cracked or use a kitchen towel. Hot soup in a sealed blender builds steam and erupts.

Combine tomatoes, juice and/or stock in saucepan.
Simmer 30 minutes.
Puree, along with the basil leaves, in small batches, in blender or food processor.
Return to saucepan and add cream and butter, while stirring, over low heat.
Garnish with basil leaves and serve with your favorite bread.
