Why choose between sloppy joes and loaded baked potatoes when you can smash them together?

Seasoned ground turkey gets cooked down with onions, bell peppers, and mushrooms in a rich marinara sauce, then spooned over split, fluffy microwaved potatoes.

A shower of grated Parmesan and fresh parsley on top ties it all together.

This is comfort food that leans a little lighter without sacrificing an ounce of satisfaction.

Kitchen Tips

  • Use a nonstick skillet and skip the oil. Ground turkey releases enough fat on its own to keep things moving.
  • Microwave the potatoes while the turkey simmers so everything finishes at the same time. No waiting around.
  • Swap marinara for arrabbiata sauce if you want some heat, or stir in a pinch of red pepper flakes.
