Seasoned ground turkey gets cooked down with onions, bell peppers, and mushrooms in a rich marinara sauce, then spooned over split, fluffy microwaved potatoes.
A shower of grated Parmesan and fresh parsley on top ties it all together.
This is comfort food that leans a little lighter without sacrificing an ounce of satisfaction.
Kitchen Tips
- Use a nonstick skillet and skip the oil. Ground turkey releases enough fat on its own to keep things moving.
- Microwave the potatoes while the turkey simmers so everything finishes at the same time. No waiting around.
- Swap marinara for arrabbiata sauce if you want some heat, or stir in a pinch of red pepper flakes.

Pierce potatoes with tines of fork, microwave on HIGH 20 to 22 minutes until potatoes are fork-tender.
Meanwhile, in large nonstick skillet over medium heat sauté turkey until no longer pink, about 6 minutes.
Add onion, bell pepper and mushrooms; sauté, stirring, 3 minutes.
Stir in marinara sauce; bring to boil, reduce heat, cover and simmer 10 minutes.
Season with salt and pepper; stir in parsley.
Place potatoes on 4 plates, split and fluff.
Top potatoes with turkey mixture and cheese, dividing equally.
