Directions

  1. Whisk together the lemon juice, olive oil, salt and several grindings black pepper.

  2. Lay out 4 slices of the bread and brush lightly with some of the dressing. Top with the smoked salmon, cucumber and greens. Drizzle with the remaining dressing and cover with the remaining slices bread. Press down lightly and cut into halves.
