Meal prep meets old-world Swiss tradition in this overnight cereal that takes 10 minutes to throw together and feeds you all week long.

Oat bran and rolled oats soak overnight in applesauce and unsweetened apple juice, softening into a thick, creamy porridge loaded with natural apple flavor.

Raisins plump up as they absorb the liquid, sliced almonds keep their crunch, and cinnamon ties the whole bowl together.

Eat it cold straight from the fridge, or microwave a serving for a couple of minutes when you want something warm.

Top with skim milk or a spoonful of yogurt and breakfast is handled.

Kitchen Tips

  • Use chunky applesauce for more texture. The little apple pieces scattered through the oats give each bite something to chew on.
  • Give it the full overnight soak. The oat bran needs time to absorb liquid and turn creamy. A few hours won’t cut it.
  • Portion into individual containers at the start of the week for grab-and-go mornings. It keeps well for up to seven days.

Directions

Combine all ingredients; mix well.

Cover; refrigerate overnight.

Store in refrigerator up to one week.

Serve cold or hot with skim milk or low-fat yogurt if desired.

To heat one serving, place ¾ cup cereal in a 2-cup microwavable bowl.

Microwave on HIGH 1 minute 30 secondsto 2 minutes or until heated through.

Stir well.
