40 minHere’s a throwback cookie recipe that probably came off the back of a cereal box sometime around 1965, and honestly, it still holds up.
Crushed Special K cereal gives these cookies an unexpected crunch that’s lighter and crispier than your typical flour-heavy drop cookie. Packed brown sugar keeps the centers chewy and caramelly, while chopped walnuts add that toasty, nutty backbone.
They’re small, they’re addictive, and they make five dozen. Which sounds like a lot until you see how fast they disappear.
Kitchen Tips
- Crush the cereal in a zip-lock bag with a rolling pin. You want coarse crumbs, not dust.
- Use packed brown sugar for the full caramel flavor. Light or dark both work here.
- These spread, so leave a couple inches between drops on the baking sheet.
- Cool completely on a wire rack. They firm up as they cool and get that chewy-crisp texture.
Ingredients
Directions
Measure Special K cereal; crush to 1½ cups. Set aside.
Sift together flour, baking powder, soda and salt.
Set aside.
Place margarine and sugar in large mixer bowl; beat until light and fluffy.
Add eggs; beat well.
Add sifted dry ingredients; mix until thoroughly combined.
Stir in Special K and walnuts.
Drop by level measuring-tablespoon onto lightly greased baking sheets.
Bake in moderate oven (350F) about 15 minutes or until lightly browned.
Remove immediately from baking sheets; cool on wire racks.
Yield: about 5 dozen Walnut Chews, 1½ inch in diameter.
