If you grew up in a household with Eastern European roots, you already know this combination.

Sweet, earthy beets coated in tangy sour cream with a splash of apple cider vinegar is one of those old-world side dishes that never goes out of style.

This version keeps things dead simple: canned beets, a handful of pantry staples, and a few minutes in the microwave.

The sour cream melts into the warm beets and creates a velvety, slightly tangy sauce that pairs with just about any roasted meat or hearty grain.

Pro Tips

  • Use full-fat sour cream for the richest, silkiest texture. Low-fat versions tend to thin out when heated.
  • Fresh dill is a natural partner. Stir in a tablespoon of chopped dill right before serving for an extra layer of flavor.
  • Try it chilled too. This works surprisingly well as a cold side dish straight from the fridge, almost like a beet salad.
