Turkey gets seasoned with sage, paprika, black pepper, and chopped onion, then bound with a bit of breadcrumb to keep the patties moist and tender. An overnight chill in the fridge lets the flavors develop and makes the mixture easy to shape into patties come morning.

Pan-fry them slowly in a little oil until they’re golden brown on both sides. You get all the savory, herby satisfaction of pork sausage with a fraction of the cholesterol.

Kitchen Tips

  • The overnight rest is important. It firms the mixture and lets the sage permeate the meat.
  • Fry on medium-low heat, not high. Turkey is leaner than pork and dries out fast if you rush it.
