This hearty stroganoff trades pricey beef strips for budget-friendly ground beef without sacrificing that rich, creamy texture you crave.

Tender crumbles of seasoned beef mingle with golden-brown mushrooms and sweet caramelized onions in a tangy sour cream sauce that clings to every strand of egg noodle.

Perfect for busy weeknights when you need comfort food fast.

Kitchen Tips

  • Brown the beef well: Don’t stir constantly; let it develop a nice crust for deeper flavor
  • Cook mushrooms separately: This prevents them from steaming and ensures they get properly caramelized
  • Room temperature sour cream: Add it off the heat to prevent curdling
  • Save pasta water: A splash helps thin the sauce if it gets too thick

Variations

  • Swap ground turkey or chicken for a lighter version
  • Add a splash of Worcestershire sauce for extra umami depth
  • Stir in fresh dill or parsley just before serving
