Crustless broccoli quiche with three cheeses: American, Swiss, and Parmesan, made easy with Bisquick batter. A no-fuss egg bake in an hour.

No pie crust? No problem. Bisquick creates its own tender base right in the pan.

Eggs, milk, oil, and baking mix get stirred together with broccoli, American cheese, Swiss cheese, and a generous hit of Parmesan.

Pour it all into a greased 8×8 pan and bake until set and golden.

It slices into squares, not wedges, which somehow makes it feel even more casual and approachable.

Kitchen Tips

  • Break the cheese slices into small pieces so they distribute evenly and melt faster
  • Let the quiche cool for a few minutes before cutting. The eggs firm up and hold together better
  • Add a pinch of garlic powder to taste. It rounds out the cheese flavors without being obvious
  • This reheats well the next day. Cover and warm in the oven to keep the texture right

Directions

Cook broccoli according to directions, drain.

Beat eggs, add all ingredients to eggs.

Bake at 350℉ (180℃) for 30 to 35 minutes in 8×8 inch greased pan.
