This is one of those dump-it-all-in-a-skillet suppers that tastes like it simmered for hours but is on the table in 40 minutes. Smoked sausage chunks, quartered red potatoes, onion wedges, and stewed tomatoes all go into one big skillet, then cabbage wedges nestle right on top to steam while everything bubbles away.

The stewed tomatoes create a savory broth that soaks into the potatoes and coats the sausage. Spoon that sauce over the cabbage wedges before serving and you’ve got a complete meal in one pan.

It’s Eastern European comfort food at heart, the kind of satisfying, rib-sticking dinner that doesn’t ask much from the cook.

Kitchen Tips

  • Use fully cooked smoked sausage like kielbasa so it just needs to heat through, not cook from raw.
  • Keep the potato quarters small enough to cook through in 20 minutes. If your potatoes are large, cut them into eighths.
  • Don’t lift the lid while the cabbage steams. It needs that trapped heat to get tender.
  • Serve with crusty rye bread or a smear of whole grain mustard on the side.

Directions

  1. In large skillet, combine all ingredients except cabbage; mix well.

Arrange cabbage wedges over top.

  1. Bring to boil. Reduce heat to medium-low; cover and cook 15 to 20 minutes or until vegetables are tender.

Spoon sauce from skillet over cabbage wedges before serving.
