10 minThis is a cocktail party spread that punches well above its weight for 10 minutes of effort. Sharp cheddar and cream cheese get blended with dry sherry and a touch of curry powder, then folded together with chopped chutney for sweet-spicy pockets in every bite.
It works two ways. Top it with snipped chives and serve alongside crackers for a savory appetizer. Or skip the chives and set it out with sliced apples, grapes, and pear wedges for a surprisingly elegant dessert dip.
The sherry adds a nutty warmth that ties the sharp cheese and fruity chutney together. Make it an hour ahead so the flavors have time to meld in the fridge.
Pro Tips
- Use the sharpest, most aged cheddar you can find. Mild cheddar fades into the background against the bold chutney and curry.
- Soften the cream cheese fully at room temperature before blending. Cold cream cheese makes a lumpy spread.
- Chop the chutney fine so it distributes evenly rather than sitting in big pockets.
- Bring it back to room temperature before serving. Cold dulls the flavors and makes the spread stiff.
