Cucumber dill sauce is the cooling counterpoint that turns a simple grilled fish or lamb dinner into something memorable. This version skips the sour cream of a typical American take and goes straight for plain yogurt, which gives the sauce its tang and a lighter texture closer to a Greek tzatziki than a creamy ranch.

The step that separates a great cucumber sauce from a watery one is the salt-and-drain. Grated cucumber is mostly water by weight, and if you skip the 15-minute salt rest and squeeze, that water leaches into the yogurt over the next hour and turns the sauce into pale soup.

Grated raw onion is the other smart move. It dissolves into the sauce instead of giving you crunchy bites, lending sharpness without texture interruption. Plenty of fresh dill is the move, dried dill never has the same brightness or perfume.

Kitchen Tips

  • Use kosher salt, not table salt, for drawing water from the cucumber. The bigger crystals draw moisture more evenly without over-salting.
  • Wring the drained cucumber in a clean kitchen towel to remove every last drop of water. Dry cucumber, thick sauce.
  • Use full-fat yogurt for the richest texture. Greek yogurt works too and gives an even thicker result.
  • Make it at least an hour ahead. The flavors meld and the dill perfume develops with a short rest in the fridge.

  • Add a clove of grated garlic and a squeeze of lemon for a proper tzatziki.
  • Stir in a teaspoon of Dijon mustard for a sharper, more savory edge.
  • Swap dill for fresh mint and use it as a sauce for grilled lamb or kebabs.

Directions

Place grated cucumber in a strainer and sprinkle with salt Let drain 15 to 30 minutes.

Rinse under cold water and squeeze dry.

In medium bowl, combine cucumber with remaining ingredients.

Stir to mix well.

Season with additional salt to taste. Cover and refrigerate until serving time.
