There’s no cilantro-lime dressing, no fresh pico, no fancy avocado, just seasoned ground beef, crunchy Doritos, shredded iceberg, and a generous pour of Thousand Island that ties it all together.
Cooling the meat to room temperature before tossing the salad is the move that keeps the lettuce from wilting and the chips from going soggy. Hot meat dropped onto chips means a sad, wet pile within five minutes.
Tossing the chips with the dressing first (then adding the meat last) is the other trick. The Doritos act like little flavored croutons, and the dressing helps them grip the lettuce and cheese. Serve immediately, this salad doesn’t sit, it’s a here-and-gone dish.

Cook the meat according to the Taco Seasoning directions. Simmer and cool to room temperature.
Mix Doritos, Thousand Island, Lettuce and cheese to coat. Add meat and cheese mix and serve!
