This SPAM breakfast skillet is a one-pan meal that stacks crispy hash brown potatoes, colorful bell peppers, onion, and julienned SPAM under a seasoned egg mixture, then gets topped with melted cheddar cheese. It’s hearty, it feeds six, and the whole thing happens in a single skillet.

The potatoes and vegetables cook first over medium-high heat to get some color and crispness. The SPAM goes in next and fries alongside the potatoes, picking up browned edges that add a caramelized, salty crunch.

The egg mixture gets poured over everything and the pan gets covered on medium-low to set the eggs gently like a frittata. No scrambling, no stirring. Just a lid and patience. The cheese goes on at the very end off the heat, melting into the top from residual warmth.

Directions

In large non-stick skillet, cook potatoes, onion, and peppers in oil over medium-high heat 5 minutes, stirring constantly.

Add SPAM; cook and stir 5 minutes.

In small bowl, combine egg product, basil, salt, pepper, and hot pepper sauce; blend well.

Pour over mixture in skillet.

Cover. Cook over medium-low heat 8 to 12 minutes or until set.

Sprinkle with cheese; remove from heat.
