The clever bit is the ring shape: pressing the ground beef mixture around an inverted custard cup creates a doughnut that cooks evenly from all sides at once. A traditional loaf shape would leave you with a raw center while the edges turn to leather.

Shredded carrot adds moisture and a touch of sweetness without changing the meatloaf flavor profile. The bread crumbs and egg keep it tender, and the tomato topping caramelizes into the savory crust that defines a proper meatloaf.

Kitchen Tips

  • Pour off the rendered fat before slicing or the bottom slices will sit in a greasy pool on the plate.
  • Don’t overmix the meat. Pulse the food processor just until everything looks combined. Overworked meat turns dense and tough.

Directions

In food processor, shred carrot.

Add remaining ingredients except for the tomato paste.

Process until blended. Invert a 6 oz custard cup in center of a 9 inch glass pie plate.

Shape mixture into a ring around cup.

Spread the tomato paste over the top of the meat loaf.

Cook in microwave on high 15 minutes or until juices run clear.

Pour off any fat from dish before slicing.
