Texas Tuna Burgers take canned tuna from ho-hum to holy smokes with chopped green chilies folded right into the mix, then smothered in a spicy crushed tomato sauce and crowned with melted Monterey Jack under the broiler.
The crackers and powdered milk keep things tender on the inside while you get a golden sear on the outside.
You’ll have eight hearty burgers on the table in about 35 minutes flat.

- Drain the tuna well and press out excess moisture so the patties hold together on the skillet.
- Don’t skip the broiler step. That bubbly, browned cheese on top is what makes these sing.

In medium bowl combine tuna, milk powder, cracker crumbs, onion, chili peppers, and egg; mix well and form into 8 equal burgers.
In 12 inch skillet heat oil over medium heat; add tuna burgers and cook, turning once, until lightly bowned, 2 to 4 minutes on each side.
In measuring cup or small bowl, combine tomatoes and chili powder and pour over burgers.
Cover pan, reduce heat to low, and let simmer until sauce is thoroughly heated, about 5 minutes.
Transfer burgers and sauce to flameproof platter and sprinkle with cheese.
Broil or until cheese is melted and lightly browned, 1 to 2 minutes.
