These ain’t your ordinary tuna patties, y’all.

Texas Tuna Burgers take canned tuna from ho-hum to holy smokes with chopped green chilies folded right into the mix, then smothered in a spicy crushed tomato sauce and crowned with melted Monterey Jack under the broiler.

The crackers and powdered milk keep things tender on the inside while you get a golden sear on the outside.

You’ll have eight hearty burgers on the table in about 35 minutes flat.

Kitchen Tips

  • Drain the tuna well and press out excess moisture so the patties hold together on the skillet.
  • Don’t skip the broiler step. That bubbly, browned cheese on top is what makes these sing.
  • Serve on toasted buns with pickled jalapenos and a squeeze of lime for the full Tex-Mex experience.

In measuring cup or small bowl, combine tomatoes and chili powder and pour over burgers.

Cover pan, reduce heat to low, and let simmer until sauce is thoroughly heated, about 5 minutes.

Transfer burgers and sauce to flameproof platter and sprinkle with cheese.
