45 minThis is the kind of casserole that feeds a family of eight without complaint. Browned ground beef with onions, celery, and mushrooms gets layered with green beans, smothered in diluted cream of mushroom soup, and topped with a blanket of frozen Tater Tots that bake up crispy and golden.
The layering order is what makes every serving balanced. Half the meat goes on the bottom, green beans in the middle, remaining meat on top, then soup over everything, and Tater Tots as the crown. That means no matter where you scoop, you get meat, beans, creamy sauce, and potato crunch in one bite.
Brown the beef well before assembling. Break it into small crumbles and let it develop some real color. Pale, steamed ground beef adds no flavor depth to the casserole.

- Drain the green beans thoroughly. Excess liquid from the cans thins the mushroom soup and makes the casserole watery instead of thick and saucy.
- Arrange the Tater Tots in a single, tight layer. Gaps let the steam escape and you lose that satisfying crispy-on-top, creamy-underneath contrast.
- The casserole is done when you see bubbling around the edges and the Tater Tots are deep golden brown. Don’t pull it early.

Ingredients
Directions
Brown ground beef, onions, celery and mushrooms or water chestnuts.
Place half of meat mixture in bottom of 9 x 13-inch bake pan.
Add string beans.
Cover with remaining meat mixture.
Pour diluted mushroom soup over all.
Cover with Tater Tots and bake at 375℉ (190℃) F for 30 minutes or until casserole is bubbly and potatoes are crispy.

It's worth the little bit of extra effort to use fresh green beans. Even frozen ones would give a higher nutritional rating to this dish. And rice would be a good starch; tater tots are so processed.
