This deep-dish beauty starts with a classic custard of milk, eggs, and two kinds of cheese (Swiss for nuttiness, cheddar for sharp bite), then lets you build your own adventure with the fillings. Directions

Preheat oven to 350℉ (180℃). Prepare 9 inch pie shell, at least 2-inch deep.

Scald milk. On medium heat, add cheese, stirring until melted. Remove from heat and beat in 1 egg at a time. Add salt and pepper.

Put vegetables and meats (optional) in shell; pour egg mixture into shell. Bake until golden brown and firm, approximately 45 to 55 minutes.

Cool and serve near room temperature.
