30 minThese aren’t your standard Tuesday tacos, and that’s exactly the point.
Lean ground beef gets browned with onions, green chiles, and garlic, then seasoned with chili powder for a clean, straightforward filling.
But the real move here is the topping: fresh chopped tomatoes tossed with low-fat Italian dressing and seasoned salt, creating a quick marinated salsa that adds a tangy, herby brightness you don’t get from a jar.
Pile the beef into crispy taco shells, spoon on that dressed tomato mixture, and finish with shredded mozzarella (instead of the usual cheddar), lettuce, and taco sauce.
Variations
- Turkey swap. Ground turkey works just as well here and drops the fat content even further.
- Soft shells. Use warm flour tortillas instead of crunchy taco shells for a different texture.
- Bowl it. Skip the shells entirely and serve everything over rice or salad greens for a taco bowl.
Kitchen Tips
- Drain the beef well. Even lean ground beef releases fat. Pour it off so the filling stays flavorful without being greasy.
- Let the tomato mixture sit. Even 10 minutes of marinating in that Italian dressing makes the tomatoes more flavorful and juicy.
